Oat Raisin Breakfast Muffins

im clearing off my drafts now.. there are loads of pictures since Jan that is when we found out about our surprise that arrived in Aug! I guess i really dont have much time to type on this muffins so i’ll just go on to the recipe straight away!

And oh.. i found these beautiful muffin cups from IKEA.

3oz / 85 grms rolled oats

8fl oz / 250 ml buttermilk

4 oz / 120g butter at room temp

31/2 oz / 100 grms dark brown sugar

1 egg room temp

4 oz / 120 grms wholemeal flour

2 tbsp brown flazseed powder

2 tbsp wheat germ

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 oz / 30 grms raisins

2 oz pumpkin and sunflower seeds

  • In a bowl combine oats and buttermilk and let it stand for 1 hour
  • Preheat oven to 400F/200C/Gas6
  • Cream butter and sugar until light and fluffy
  • Beat in egg
  • Inanother bowl sift flour,baking powder,baking soda and salt.
  • After sifting combine flaxseed powder and wheat germ.
  • Stir into the butter mixture alternating with oat mixture
  • Fold in the raisins and seeds
  • Do not over mix
  • Fill into the muffin cups and bake until the skewer comes out clean about 20-25 mts.

blueberry muffins
Today morning when R woke up she asked me what i was making special today. As kids grow up almost everyday is going to be special and everyday they demand something special or some kind of goodies! :)

Here you go sweeties.. Double chocolate chip cookies for my dear daughter who loves any form of chocolate and blueberry muffins for my dear son who think boys should eat everything ‘blue’. I wonder from where he got the idea! LOL! And what all things he will learn like this when he goes to school next year! :)

To Die For Blueberry Muffins!!

These muffins came our soft and moist and it really tasted good. i didnt think it would be this good with frozen thawed berries but it is yummmm!

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

1 1/2 cups all-purpose flour

1/2 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup melted butter

1 egg

1/3 cup milk

1 cup frozen thawed blueberries

For the topping:

1/4 cup plus 1 tblsp white sugar

1/3 cup all-purpose flour

1/4 cup butter, softened

1 1/2 teaspoons ground cinnamon

How to make :

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

Combine flour, sugar, salt and baking powder. In another bowl combine butter,egg and milk  and mix well. Mix this with flour mixture. Fold in blueberries. Fill 3/4th of the  muffin cups and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes in the preheated oven, or until done.

Double Chocolate Chip Cookies

This cookie recipe was given to me by my friend Jen. But as R wanted double chocolate i added cocoa powder to it. Still it came out so soft and moist!

1 cup all purpose flour

1 1/2 tbsp cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup plus 1 tbsp melted butter

1/2 cup white sugar

1 tsp vanilla

1 egg

1 egg yolk

1 cup semi-sweet chips

Preheat oven to 325.
Combine flour, baking soda and salt.  Set aside.
Cream butter & sugars.  Beat in vanilla, egg & yolk until light and creamy.  Gradually mix in dry ingredients.  Stir in chocolate chips.
Drop dough onto greased cookie sheets. (Mine was around a tbsp) Bake for about 10-15 minutes.  Cool for a few minutes on the sheets, then finish cooling on wire rack.

Oatmeal Muffins

Yesterday night i had a lot of reasons to bake muffins! I had brought this silicon muffin cups and wanted to try on it so badly! And my Dh was coming home late from work and the kids were in bed by 9 pm and i had pretty much nothing to do. Then searching for lots of recipes especially the ones with oats i came across this recipe. It was a good base but i added a lot of things to it.

The recipe was is very easy to make. I started of by ( pm and the first batch was already in the Oven by 9:25pm!
The changes i made in the recipe are
  • added 1/4 cup of applesauce
  • added 1 large chopped pear
  • added a medium sized mashed banana.
  • in some of the muffins i added half a tsp of Nutella
  • in some i added chopped dates and walnuts
  • in some i added a tsp of strawberry jam in the middle
Altogether they were delicious. And i love love love the silicon muffin cups. Just turn them upside down the muffins are out and you dont even have to wait for it to cool.

Healthy Apple Cinnamon Muffins

My hubby is a big fan of cinnamon. So i keep on searching for baking recipes with loads and loads of cinnamon flavour. This recipe one came out perfect!

Its sure a healthier version of the muffins with no oil and sugar. I made some changes in the original recipe after reading the reviews — increased the cinnamon by 1 tsp, milk by 1/4 cup, added 1 more egg,  and reduced the apple to 1.
Also i added about 4 tbsp of raisins and walnuts as my kids suggested!! It turned out really yummy!!! i still can smell the cinnamon all over my kitchen!

Do u know the muffin man the muffin man the muffin man the muffin man..

LOLs.. when ever i make muffins both my kiddos sing this :)
All Recipes is my fav website for baking. The main thing is that the recipe will have lots of reviews which will help to make thr original recipe better and healthier.
I made the Banana Crumb Muffins from this site last week and followed the recipe exactly, except that i used 1/2 cup of sugar and used oil instead of butter. It was so soft and moist and yummy. And another thing i didnt add the topping because i thought it might be very sweet.
When i made it this week i made it more healthier. I used whole wheat flour instead of all purpose flour, 1/2 cup of brown sugar and added 1 tsp of cinnamon. Still it was yummy and moist and soft. I sprinkled a lil bit of quick cooking oats on it. I also added 1/4 cup of walnuts and raisins this time.
Altogether it was delicious.
