Wholemeal Carrot Cake Oatmeal Cookies

Baked these today :) Its fresh and hot, just out of the oven!

They are moist soft cookies even with wholemeal flour. I was really surprised with the texture of the cookies, i thought it might be dry and rough but it turned out to be the opposite! we loved them. It makes a good breakfast cookie and one is enough for your snacky cravings!

This is from another of my favorite site Taste Spotting

1 stick butter (½ cup), softened
¾ brown sugar i cut it down to 1/2 cup
1 egg
½ teaspoon vanilla
1 cup carrots, finely shredded
½ cup coconut
½ cup chopped walnuts
3/4 cup white chocolate chips i used semi sweet dark choco chips
1 cup flour i used wholemeal flour
1 cup oats i coarse grinded rolled oats
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt

Directions

Cream together softened butter and brown sugar. Add egg and vanilla, beat with an electric mixer until fluffy (approximately 1-2 minutes).

Combine flour, baking soda, cinnamon, and salt in separate bowl. Mix together with a wire whisk. Add to the butter, brown sugar, egg mixture. Stir until just combined.

Add oats, coconut, white chocolate chips, walnuts, carrots. When everything is well-integrated into the batter, refrigerate for approximately 30 minutes. Batter will be sticky.

While refrigerating, preheat oven to 350 degrees. Spoon out golf ball-size scoops onto a cookie sheet and bake for 12 – 15 minutes depending on temperature of oven and how cool the dough is from the fridge. They will be golden brown on top when done. If they appear moist in the middle they aren’t quite there yet! Cool completely on a wire rack before enjoying.

I wouldnt say these are the best cookies ever but the best healthy cookies. :) Kids didnt like it but dipped in milk they loved it. I guess they like cookies in any form and shape!

This recipe has been in my mail for some time. I got this from Simply.Food and i really didnt notice it was eggless till i started to make it. The final verdict i and hubby loved it. A guilt free tea time snack and very easy to bake! :)

1.5 cups Wholemeal flour
1/3 cup coarsely chopped nuts (I used walnuts,hazlenuts,almonds)
1/2 cup apple sauce
2/3 cups sugar
pinch salt
1 teaspoon baking powder
3 tablespoons sunflower oil
1/4 cup dessicated coconut
Milk 1-2 tablespoons to make dough.
1/2 teaspoon vanilla essence
Almond halves / dessicated coconut for garnishing (optional)
1. Put the wholemeal flour in a bowl , add the baking powder and salt and stir in.
2. Stir into the flour the nuts and dessicated coconut
3. In jug add the apple sauce, oil ,vanilla and suger. Beat together .
4. Stir the liquid into the flour and make a dough. Only add milk if dough appears a little dry otherwise omit it.
5. Cover and chill the dough for 30 minutes.
6. After 30 minutes make small balls and place them on a baking tray lined with parchment paper.
7. Flatten the balls into round cookie with the help of a fork.
8. Garnish cookies with almond halves or sprinkle with dessicated coconut before baking in the oven, this is optional.

blueberry muffins
Today morning when R woke up she asked me what i was making special today. As kids grow up almost everyday is going to be special and everyday they demand something special or some kind of goodies! :)

Here you go sweeties.. Double chocolate chip cookies for my dear daughter who loves any form of chocolate and blueberry muffins for my dear son who think boys should eat everything ‘blue’. I wonder from where he got the idea! LOL! And what all things he will learn like this when he goes to school next year! :)

To Die For Blueberry Muffins!!

These muffins came our soft and moist and it really tasted good. i didnt think it would be this good with frozen thawed berries but it is yummmm!

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

1 1/2 cups all-purpose flour

1/2 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup melted butter

1 egg

1/3 cup milk

1 cup frozen thawed blueberries

For the topping:

1/4 cup plus 1 tblsp white sugar

1/3 cup all-purpose flour

1/4 cup butter, softened

1 1/2 teaspoons ground cinnamon

How to make :

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

Combine flour, sugar, salt and baking powder. In another bowl combine butter,egg and milk  and mix well. Mix this with flour mixture. Fold in blueberries. Fill 3/4th of the  muffin cups and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes in the preheated oven, or until done.

Double Chocolate Chip Cookies

This cookie recipe was given to me by my friend Jen. But as R wanted double chocolate i added cocoa powder to it. Still it came out so soft and moist!

1 cup all purpose flour

1 1/2 tbsp cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup plus 1 tbsp melted butter

1/2 cup white sugar

1 tsp vanilla

1 egg

1 egg yolk

1 cup semi-sweet chips

Preheat oven to 325.
Combine flour, baking soda and salt.  Set aside.
Cream butter & sugars.  Beat in vanilla, egg & yolk until light and creamy.  Gradually mix in dry ingredients.  Stir in chocolate chips.
Drop dough onto greased cookie sheets. (Mine was around a tbsp) Bake for about 10-15 minutes.  Cool for a few minutes on the sheets, then finish cooling on wire rack.

choc chip cookies

Chocolate chip cookies are my kids favorite. They can eat up to 4-5 cookies in one shot.. LOL!  I make them often but before i can take a pic of these they will be finished! My daughter doesn’t even wait for them to cool down she loves them when its warm and the choco chip are meting! (Girls!)

So today a cozy saturday morning everyone are asleep i woke up early and decided to make some of these to surprise them. I could luciky make a batch before all of them woke up and finally take a pic of it!

This recipe is again form my favorite All Recipes And here is the recipe for the Chocolate chip cookies

The changes i made are – I added only 1 cup chocolate chips instead of 2. And i did not melt the chip. I added them straight away. This is a fool proof recipe. I really enjoyed making those.

Chocolate chip cookies!!

After i made the yummy muffins today my daughter said SHE wants to make chocolate chip cookies!!! i said why not? any ways with all the rain the kids was very bored and they had nothing much to do a home. I tried this recipe before but that time i didn’t have any cocoa powder. This time i had it so i followed the exact recipe and it was sooooo chocolaaateeee and wonderful…

ohh forgot… i really did make some changes!!! I reduced the sugar to 1 cup and i added only about half cup of chocolate chips. Also i freezed the dough for 20 mts.
Also my kids wanted to decorate it with some Reese Peanut butter cups and i think the cookies turned out really cute :) not in a perfect shape but they really have a kiddy touch :)
