Oatmeal Currant Breakfast Bread

Now a days anything with oats and wholewheat or wholemeal fascinates me!! i want to bake them right away! when i saw this recipe at 7spices and My Recipes i was like wow this is something what i want now! I can make it ahead and freeze and when ever i want it i can just pop it in the microwave and have some wholesome break fast everyday even if i wake up late!
i didn’t have any currants or berries or raisins but these were delicious even without it.
here is the recipe.
1 1/2 C old fashioned rolled oats (not quick-cooking)
1 1/4 C  buttermilk
6  tbsp  unsalted butter
1/2 C  packed dark brown sugar
2  eggs, well beaten
1  C  whole wheat flour
1/4 C  wheat germ
1  tsp  baking powder
1/2 tsp  salt
1/2 tsp  baking soda

1 C currants or raisins

In a medium bowl, combine oats and buttermilk. Let soak for an hour.

2. Meanwhile, preheat oven to 210° C (400° F). Generously grease a loaf pan with butter or margarine. Stir brown sugar and eggs into oat mixture. In a large bowl, stir together flour, wheat germ, baking powder, salt, and baking soda.

3. Melt the butter and set aside to cool slightly. Add oat mixture to dry ingredients. Stir in currants, cranberries (if using) and melted butter, and mix until well combined.

4. Spoon batter into prepared pan. Bake until loaf has risen and is well browned or until the skewer inserted comes out clean, about 40-45 mins.

Note: Let it cool the bread completely before you cut it, or it will crumble. It can be stored up to 4-5 days in refrigerator. It tastes best when microwave it for 10 seconds.

Raisin studded apple bread pudding

Easy yummy pudding the whole family will enjoy!! :) When i decided to make this i was sure my hubby would love this because he loves apples with cinnamon.. was unsure about my kids. They did ok with it i think with lots of nuts sprinkled on top they didn’t enjoy! They like pudding which melt in their mouth with out any disturbance!

Another yummy recipe from Smitten Kitchen

1 pound bakery white bread, crusts removed, cut into 1-inch cubes

1 Granny Smith apple, peeled and cut into 1/2-inch pieces 1 cup (6 ounces)

golden raisins, plumped in hot water for 15 minutes

3 large eggs

3/4 cup sugar

1/4 teaspoon cinnamon

1/8 teaspoon freshly grated nutmeg

1/8 teaspoon ground ginger

1/4 teaspoon pure vanilla extract

1/4 teaspoon salt

3 cups whole milk

2 tablespoons unsulfured molasses

1/4 cup sliced almonds

Preheat the oven to 350°F. Spread the bread cubes on a baking sheet and toast in the oven for 6 minutes, until crisp. Transfer to a bowl and add the apple and raisins. Generously butter either a 9×13-inch deep baking dish or six 8-ounce ramekins. If using ramekins, set them on the baking sheet. In a medium bowl, using a handheld electric mixer or whisk, beat the eggs with the sugar. Beat in the ground spices, vanilla and salt. In a medium saucepan, heat the milk with the molasses until just warm to the touch. Gradually beat the warm milk into the egg mixture, scraping the bottom and side of the bowl. Spread bread mixture out in your large baking dish, or distribute it among ramekins. Pour the custard over the bread mixture, nudging the bread around a bit to make sure it soaks all of the pieces. Let stand for 5 minutes. Sprinkle the almonds on top. Bake in the center of the oven for about 40 minutes, until puffed and set, with the tops lightly browned. Let the bread pudding(s) rest for at least 15 minutes before serving.

* I think my pudding got baked before 40mts. Thats why it might have burned a little bit!

Quick Chicken Sandwich – Light Meal

quick chicken sandwich

1 chicken breast

pepper – 1 tsp

salt to taste

fat free mayonnaise - to taste

whole meal bread – 4 slices

cook chicken with salt and pepper and shred it. When its cooled add mayo as per you need and mix well. Apply on one side of bread, close with other slice.. Enjoy your instant meal!

You can freeze the left over chicken and thaw it when ever you need. Mix the Mayo only when you are ready to eat. Do not freeze the chicken mixed with mayo.  You can also add lettuce, tomatoes or any other veggies to this. I was so lazy today that i just did a simple sandwich!

Garlic Bread toppped with eggs!

Now that i brought an electric oven i have been in a mood to bake n grill… :) so fa i made choc chip cookies and oatmeal cookies.. both of them have been so fast moving that i didn’t even have time to take a pic and post it! LOL!!

today morning i thought i would make some garlic bread.. But then i thought it would be very light so i decided to cover it up with some eggs.. (my friend Afroze’s idea) so that everyone will get some carb,proteins,fats etc all together!!!!
Blend 2 cloves of garlic, 2 tbsp of olive spread, 1 tbsp of olive oil, 1 small bunch of parsley into a smooth paste.

2 hard boiled eggs cut into thin slices

2 slices of cheddar cheese

Preheat oven to 180 C.

Cut the bread half and apply the blended paste on it. Top up with cheese and the eggs.. im sure kids are gonna love it!

potato Bread Sandwich

Sandwiches is my all time favorite food! I usually turn all left overs into sandwiches!!! some turn out food some flop!! LOL!!

i had some left over aloo subzi yersterday and i thought that would make an interesting lunch for my hubby!!! is a big fan of leftover sandwiches but i made the green chutney more spicy this time and he liked it!

what you’ll need is

6 slices of bread
pototo subzi
green chutney
butter for applying on bread (optional)

Apply butter on 2 slices of bread. Spread green chutney on 1 slice and spread potato subzi on other. Close both the slices and put into a sandwich toaster. Toast till brown.

Bread Pudding!

This is one of easiest puddings i have ever made! Even if i have an unexpected guest i can make it with in half n hour!!! And its so yummy!!! and my kiddos love it! And most of the ingredients you need for it will be at home all the time!

The recipe..

5 white bread with the sides trimmed off
1 ltr of milk
11/2 tbsps of china grass pwdr
sugar to sprinkle
3/4th tin condensed milk (if u want to make it sweeter u can add the whole tin)
butter to apply on the bread
2-3 drops of vanilla essence (optional)

Boil milk and china grass pwdr together.
Mean while butter both the sides of the bread and sprinkle sugar on both sides.
Arrange it in one layer on a flat dish.
Pour the boiled milk on top of it.
Let it cool and then refridgerate it.
Serve cool…
