Neyyada Pancakes layered with eggs

30 Jul 2010 In: egg, Iftaar, Malabar, malabar recipes

neyyada
neyyada1

Neyyada is more or less like Chattipathi but the only difference is in Chattipathiri the thin pancakes are made first and then layered with eggs. But in Neyyada each layer is steamed and when it is done the next layer is poured on top and cooked. Here goes another malabar recipe we make during Iftaar.

oil 3 tbsp

Maida/all purpose flour – 1 cup

eggs 8

sugar to taste

cardamom 1/4-1/2 tsp

cashew nuts and raisins – 1/4 cup fried in oil

  • Mix maida with water, salt and sugar as per your taste. The mix should not be watery or thich.
  • Beat eggs with a fork add sugar, a pinch of salt, cardamom powder.
  • In a non stick sauce pan or stew pan pour a ladle of the maida mix. When it is cooked pour another layer of egg mix and add cashew nuts, raisins and little oil on top. Like this each layer should be cooked before pouring the next layer.
  • Make sure that the flame is low and keep a flame tamer or heat diffuser or this type (i have the first type)  under the pan so that the heat is evenly distributed and wont get burned. I use it for all my egg palaharams!

Alternatively u can also steam layer by layer in a vessal on your stove top thats how we used to do in India but i think the non stick way is much more easier.

This post goes to Ayeesha’s Event Please do visit her blog for more yummy Iftaar recipes!

Malabar Banana Cake

banana cake

Ramadan Day 3

Day 3 i kept on thinking what should i cook because as my daughter was not fasting i didnt get any input form her! i just hate to think and think what to cook. At last i ended up on the banana as usual and some bread pakoras along with Malabar chicken curry and pathiris.

Sometimes i just wonder how people back in calicutat  dads and moms home used to cook so many things during Ramadan. All day they would be reading the Quran and by 3 pm everyone will be in this kitchen making something or the other. Well those are the joys of a joint family! Every time i go there its a totally different world and i find it very difficult to come out of it especially when we have lots of same age cousins and have a lot to catch up!

This is yet another Malabar speciality. During Ramadan there will be at least one banana snack item everyday. And I’m just used to having it here also so cant pass a day without a banana! Thank god we get the same banana here is Singapore other wise i would have been lost during Ramadan!

When i made this yesterday my hubby as usual was saying wow! i haven’t seen this since last Ramadan! (he says this when ever he sees any Malabar snack item!)

For this recipe you’ll need

2 ripe kerala bananas cut in small cubes

2 large eggs

1/2 cup milk

10 cashew nuts crushed

sugar to taste (i used around 3 tbsps)

2 tsp oil

Heat oil in a non stick sauce pan and add the bananas. Fry it till brown.

Beat eggs, milk, sugar, cashew nuts  together and pour in to the banana.

Mix well and close the sauce pan.

Make sure the bottom doesnt get burned. I use a very thin metal plate to keep on top of the stove and keep the pan on it so that the things inside wont get burned.

Cook for around 10mts open and see whether its done. Serve hot!

Caramel Pudding

9 Apr 2009 In: baking, deserts, egg, milk

This is something my mom always used to make when we make biriyani at home. I dont make this often now a days but i got nostalgic when i made biriyani last week. I thought i’ll give a try in my electric oven (my friend Safia gave me this idea). But hers burned a lot on the top.. I think my oven is much more bigger than hers so may be thats the reason mine didnt get burned that much.

My mom used to make it in cooker with out the whistle on and cook it for a long time. But i think the Electric oven is much more easier that the cooker!

Its very easy to make and and you will have all the ingredients
4 eggs
3 cups milk
2 tsp vanilla essence
sugar 3/4 cup (u can increase as per ur taste)
2-3 spoons of sugar to caramelise (separate)
Preheat oven at 180 C
Beat the eggs lightly and add all other ingredients to it except the sugar.
Sprinkle the sugar set aside for caramelising on a oven proof dish.
Keep it on a top rack of the oven till its brown
Slowly add the milk and egg mixture to it.
Put it back into the oven and let it bake for 30-40mts
Turn upside down after cooling.
Please note that the top layer will burn a little bit. You can take off the layer after it cools off. Also after 30 mts insert a tooth pick to check whether its done. Its will be a little bit of watery on the top so dont get a wrong impression that its not baked.
  • This is how it will look once its out of the oven.
  • After the top layer is peeled off it will look like this.

Fried Rice and Gobi (Cauliflower) Manchurian

29 Jun 2008 In: chicken, egg, Kids, Non veg

This is another thing i love to make during week ends because its easy to make and it has all the proteins, carbs, vitamins, minerals… LOL!! u name it.. my kiddos love it too.. so i usually save this kinda things for the weekends…

For the fried rice you’ll need

  • 2 cups cooked Basmati rice
  • 11/2 cup finely chopped veggies (celery,capsicum,beans,carrots)
  • 1 tbsp finely chopped ginger& garlic
  • 2 eggs (optional)
  • 1 cup shredded cooked chicken (optional)
  • light soya sauce to taste
  • 4 tbsp oil
  • salt to taste

Heat oil in a non stick pan and add the ginger and garlic. When its slightly brown add the cooked chicken. Let it cook for few minutes and then add the veggies. Mix well and let it cook for another 3-4 mts. When its done add the soya sauce and salt. Be careful while adding the salt because soya sauce is quite salty. After that Add rice and mix well.. This is really tasty!!! LOL! Serve hot with any Manchurians or chili chicken..

A variation for the veggie eaters..

If you want to make the veg fried rice drop the eggs and chicken. Add the veggies straight after the ginger and garlic.

This is my entry for the Mixed Rice Event and AWED Chinese.

Here is the recipe of Gobi Manchurian to go with it!
