“Soup is a food that is made by combining ingredients such as meat and vegetables in stock or hot/boiling water, until the flavor is extracted, forming a broth”.  source Wikipedia

When im lazy to cook or eat something solid food soups come to the rescue! One of the soups which i make during dinner time is this one.

It is easy to prepare and and very healthy as it as chicken breast, carrots, celery, potatoes, spinach and a lot of spices to spice it up!

So for this soup you will need

200-300 grams of chicken breast

1 medium size potato

1/2 of a spinach bunch

1 small carrot

1 celery stalk

Cut everything in to small pieces and boil together for 2 hours. Blend it with a hand blender into a fine paste or as per you like. Garnish with black pepper, marjoram, basil, oregano, crushed red pepper and salt!

soup spices

This soup is really filling and you can also change the choice of veggies, u can add corn, green peas, tomatoes, or any other veggie.

what did i do?

0 Comments 30 Jun 2009 In: Uncategorized

where did i disappear? i keep on asking the same questions on and on.. what did i do during my daughters summer holidays? LOL yup sure i was also playing around with her! Going to all the malls looking around for SALE! Going to different play areas, meeting up with friends, just chilling like a school girl enjoying the holidays!

Sadly this year there were not many shows in malls over here. Only the Dora The Explorer show at the Terminal 3 at Changi Airport. I guess that more than enough for a 5 year old to cherish till her winter vacation.

doraboots

Also some big plans were made for the next year and i was overly excited about it and now im anxious about all the plans whether or not it will work out smoothly? Anyways im crossing my fingers and hoping for the best.

My daughter was beyond excited to go back to school today and leaves my son bored for solid 4 hours! But with some snacks and some outing he’ll be happy.

And also a vacation coming up to my home town, all the weddings and salkaarams (parties) waiting for us! Cant wait to get there. And yes for sure i’ll be on media fast for all those days! :)

Rava/Sooji Laddoo (Semolina balls)

1 Comment 30 Jun 2009 In: Indian Cooking Challenge, rava, semolina, sweet

sooji laddoo

This is my first entry for the Indian Cooking Challenge. I have been thinking to make this since Srivalli posted it but thanks to her last reminder! i just ran to my kitchen, grabbed all the ingredients and started making this after reading her mail.

I have tasted rava laddoo before but i can proudly say the ones i made today was the best LOL!  May be i was reluctant to make it because i thought it might not taste good or whatever.

Here is the recipe from Srivalli. I made minor changes to it and it really really came out yummy!

Rava / Semolina – 1 cup
Sugar – 1 cup
Ghee – 25 gms
Milk – 25 ml
Cardamom powder – a pinch
Cashew nuts – 10 whole nuts
Raisins – 10 nos
Grated fresh coconut – 25 gm
Heat 2 tsp of ghee in a kadai. Once the ghee is hot enough, simmer the flame and roast cashew nuts and raisins. Once the raisins balloon up, remove. Then roast the grated coconut. Remove once done. Keep all these aside.
Add the remaining ghee and roast the Rava till its well roasted and aroma starts coming out.
In a bowl, take all the roasted Rava, Nuts, Coconut and add the Cardamom powder. Then add the sugar. Mix well.
Then slowly add the warm milk into the bowl. Check if you are able to gather as balls. When you find that milk added is enough to get you laddos, transfer it back to the kadai and cook in sim for 2mins. Mix well and then cover it and let it rest for 2 mins. Then immediately make balls or laddoos
  • Rava / Semolina – 1 cup
  • Sugar – 1 cup (i added around 3/4th cup even that was too sweet for me!)
  • Ghee – 25 gms
  • Milk – 25 ml (i used around 30-40 ml)
  • Cardamom powder – a pinch
  • Cashew nuts – 10 whole nuts
  • Raisins – 10 nos
  • Grated fresh coconut – 25 gm
  • I added a pinch of salt too.

Then add the sugar and salt . Mix well.

Then slowly add the warm milk into the bowl. Check if you are able to gather as balls. When you find that milk added is enough to get you laddos, transfer it back to the kadai and cook in sim for 2mins. Mix well and then cover it and let it rest for 2 mins. Then immediately make balls or laddoos.

It came out perfectly but sadly my kiddos were not impressed! They wanted the ‘orange’ laddoo! But my Dh was very happy with the surprise sweet!
